Tuna Cakes

As I began to make supper last night, I realized that I hadn’t posted my tuna cakes recipe on here yet! I make these things often enough for a quick, CHEAP supper and was suprised that it wasn’t posted.  Thankfully with daylight savings time, I can finally enjoy photographing recipes for the blog in some nice natural light!

This isn’t the absolute healthiest of recipes due to one ingredient, but it still makes a good quick meal when you’re pressed for time and your budget needs a little break. 😉

What You Need:

  • 3 medium-sized red potatoes
  • 3 green onions
  • 1 egg
  • 1.5 Tbsp diijon mustard
  • 1.5 Tbsp ranch dressing
  • dash of salt, pepper and garlic powder
  • 1 can flaked tuna; drained
  • lemon or lime for garnish

What You Do:

– wash the potatoes, poke some holes in them with a fork and microwave until cooked.  In my microwave, I do them for 3 minutes on one side, flip then do 3 minutes on the other side, flip again and finish for 1 minute. *if you had leftover mashed potatoes, you could skip this all together!

– once the potatoes are cooked, mash them up on a plate and set it aside so that they can cool a bit

– meanwhile rinse the green onions and chop them up

– grab a large bowl

– toss in the onions, egg, mustard, dressing, salt, pepper, garlic powder, potatoes and a can of tuna

– preheat a pan on medium heat

– when it’s heated add a tsp of your oil of choice.. I actually FINALLY bought some coconut oil (check out the VAT I got for $17 at Costco!!) so I used it this time and it is definitely my preferred oil for this recipe

– time to get your hands dirty 😉

– form patties roughly 3 inches in diameter and 2 cm thick – place in the pan

– cook for about 4 minutes then flip – they should be nice and brown

– cook an additional 3 minutes or so until the cakes feel firm

– serve nice and hot garnished with a wedge of lemon or lime (..or if you’re like Chris, some hot sauce)

– they make a nice light supper along with a spinach salad

***recipe yields approximately 8 tuna cakes***
