The Ultimate Summer Breakfast

Good morning!

Brace yourselves please because this is it.

The ultimate breakfast of breakfasts.  (I got the idea from Angela over at Oh She Glows and just ran with it.)

Ladies and gentlemen, I present to you…

Peanut Butter, Banana, and Chocolate Overnight Oats Breakfast Parfait! (whew! that title was winded!)I can’t even put into words how heavenly this breakfast is! It actually tastes like I’m eating some sort of dessert for breakfast – I love it!

So what’s in this baby?

The first layer is a banana, peanut butter and chocolate soft serve. Made by taking 1 frozen banana, a spoon of peanut butter, a spoon of Nutella and a big splash of skim milk and blending it up in a bowl.

The second layer is overnight oats. Made by mixing about 1/3C oats, 2-3tsp ground flax, a splash of vanilla, and as much skim milk needed to mix it all up and leave enough to be soaked up. I made this mixture last night then covered with saran and put in the fridge overnight.

This morning all I did was make the soft serve then layer the two into my glass along with the rest of the fresh blueberries that we picked a couple weekends ago.

DELISH!

This parfait along with an iced coffee was a perfect start to my day.
